Simple Chicken Stir Fry

Here's a great recipe that is delicious and low in fat and calories! It's also quite simple to make, so it doesn't take too much time. I hope you all enjoy this meal!

Ingredients:
1 lb. skinless, boneless chicken breasts, cut into strips
4 cups frozen stir-fry vegetables (without sauce)
1/2 cup chicken broth
1/4 cup light teriyaki sauce
Salt & Pepper to taste

Directions:
1. Spray large nonstick skillet with nonstick spray; heat. Add chicken; cook over medium heat, stirring constantly, until browned.
2. Add vegetables; stir-fry until barely tender, 2-3 minutes.
3. Add broth, teriyaki sauce, salt, and pepper; stir-fry until chicken is cooked through and vegetables are tender-crisp, about 3 minutes longer.
4. Meal-making tip: Serve over cooked rice.

Makes 4 servings. Per Serving: 179 calories; 3 g fat; 3 g fiber (this not including rice)
